2 cucumbers cut lengthwise, peeled, seeded and sliced
2 Tbs. fresh coriander leaves
2 Tbs. chopped roasted peanuts
1/4 cup diced red onion
1 Red hot Thai chili pepper, diced
2 Tbs. Thai fish sauce
1 Tbs. Garlic Chili Pepper Sauce
1/2 cup rice wine vinegar
1/2 cup sugar
In a small sauce pot, over medium heat, make the dressing by adding Thai fish sauce, vinegar and sugar; cook until sugar is dissolved.
In a medium bowl, add cucumbers, onion, Thai chili pepper and dressing, stir together until incorporated; let stand to marinate for 30 minutes.
Garnish with fresh coriander leaves and peanuts.
Serve with chicken or beef Satay and best if eaten the same day it is made.
